Holidays are upon us…. More and more parties are held in November. The weather and people travelling improve the number of guests who will come. A modified traditional Thanksgiving can be a healthy holiday meal. Turkey is a low-fat meat (unless you deep oil fry it I guess) Sweet potatoes are rich in minerals, vitamins and fiberonly becoming unhealthy when coated in sugar and marshmallows. Mashed potatoes also have good nutrition value as long as mashing butter into them. Make gravy with the excess oil/turkey fat skimmed off. Stuffing is healthier if you do stove top and use apple sauce to moisten it with the broth instead of butter or oil. Cranberries are healthy and you can’t do cranberry sauce very well without the sugar. Believe me I’ve tried. Then green beans, a green salad and pumpkin pie for dessert. This is a fairly healthy meal.
A typical Turkey Dinner – 6 oz turkey, 1.5 cup mashed potatoes, 1 cup stuffing, ½ cup steamed carrots, one white dinner roll, 2 tablespoons cranberry sauce, 1/2 cup coleslaw, 1/4 cup gravy, and 1/8piece of pumpkin pie totals 1630 calories. Aside – does anyone measure their servings at thanksgiving? I join millions in the practice of cooking more than enough turkey so there will be leftovers for at least a couple meals. I found a nice recipe for using those in an old magazine.
Thanksgiving Harvest Salad. Serves four.
1 lb. sweet potatoes (approx.. 3 med. Cut into chunks.
1 small onion minced very small
2 Tbsp olive oil
1/3 tsp chopped fresh Rosemary (optional)
1/3 cup Italian Dressing (like Wishbone)
8 cups salad greens
¼ cup dried cranberries
2 cups cubed fully cooked turkey.
Preheat oven to 400 deg. Combine sweet potatoes, onion, oil and rosemary in a roasting pan. Bake 35 min. or until potatoes are tender, stirring once. In a large bowl toss the Italian dressing with the greens. Top with warm potato mixture, cranberries and turkey. Refrigerate any left overs.

Something that is not a joke is I have decided I no longer want to play the insurance games. Health Insurance is pinched more than ever for various reasons. I have asked to be removed from any and all ‘in-network’ lists for insurers for which I was previously an net-work provider. This could take a while to actually happen. In the meantime, I will continue to bill United Healthcare established patients as in-network until we receive official word of the end date of the network contract. If you know you have out of network benefits I would be happy to go ahead and submit your claim as such, but this is now a self-pay at time of service business.
